Many people at the Apple discussions have had similar problems, audio cut-outs, long delays between tracks and iTunes stops playing altogether.
Despite the problems, Airfoil is worth just to get the local playing features to the Airport Express like gapless playback.
Next I want to experiment with sending a 24/96 high bit digital signal through Airfoil and see if it makes it through to my DAC (the DAC will display the signal it's receiving like 44.1 kHz vs. 96 kHz).
