Spaghetti Making October 19, 2008 Maxine Smith (Warrington, UK) This item does make very good spaghetti with a round cross-section rather than the rectangular one that the cutters that come with the SP150 (Imperia Italian Double Cutter Pasta Machine SP150) makes. However, you need to make the dough as stiff as you can - if it's slightly sticky or too elastic, the strands stick together. It took some trial error with the recipe a bit of practice with rolling out a stiff dough but I am now making great spaghetti. By the way, you need to roll out the dough to No. 3 on your SP150 (any thinner and you won't fill the grooves in the cutter).

All the Imperia stuff is fantastic, in my view. I have to confess that we tend to make just the straightforward lasagne sheets or make ravioli using the Imperia trays because hanging up spaghetti or one of the other stringy pastas is a pain. Having said that, if you want to make proper spaghetti, this is the item to do it with. Your Imperia machine comes with an attachment but that won't cut real spaghetti because it is straight cut. With this attachment you get the proper tubular shape.
