Where can I read information on what the peaks and dips in my measurements graph actually mean ?

Not much to it, really. The peaks mean you have "hot spots" in response - i.e. higher dB or SPL - at those frequencies, and they are louder than the rest. Dips mean you have response depressions, or lower SPL levels at those frequencies, which means they are harder to hear than the rest.
