In general: yes you can. And this goes for any driver, not just subwoofers. As long as you know or can measure the T/S parameters you can build an enclosure for the driver.

If you can figure out your panel sizes before you buy the MDF, your supplier will usually cut those for you for a fairly insignificant cost. That would just leave you the driver and amp cut outs to do which are a bit easier to do at home as you no longer have to deal with the cutting up of a full size sheet of MDF.Roger wilco on that... just got to figure out where I'm going to do the cutting and router work...
