I have a Mackie FR 800 amp running my dual subwoofer system. The fan on the amp is fairly noisy. I saw some posts on this site about fan replacement that was really helpful. My amp has a "variable speed" fan. Does anyone have any info or suggestions on what I can use use to replace the stock fan? I would like to use the quietest fan I can find.

Well look at the stock fan. Is it a 12v, 24v, something different? Whatever it is, replace it with a fan rated for the same voltage...and same size obviously :)

Or what I did, I replaced a 24v fan with 2, 12v fans wired in series.

Look for a fan that has the same size and dimensions as the stock one but moves fewer cfm. The lower the air movement the quieter the fan should be. As for variable speed.... I think this is just a function of the input voltage to the fan so any fan would vary it's speed. Feel free to correct me on this.
